I had a bit of a food prep afternoon yesterday so I was ready for my son starting school today.

Nothing worse than going to pack lunch and standing there wondering what the heck to pack! I like being organised 

This recipe was made in the thermomix and baked in the oven for around 45 min 180 degrees.

2 Free Range Organic Eggs
2 Ripe Bananas (halved)
1 Apple (quartered and cored)
125gm Organic coconut oil (liquified)
220gm White spelt flour
100gm Rapadura Sugar or Natvia (stevia/erythritol blend)
1 tsp Ground Cinnamon (pref organic ceylon)
1/4 tsp Vanilla Bean Powder
1 Tbsp chia seeds
2 tsp Baking Powder (gluten and aluminium free)


Preheat oven 180 degrees and line a loaf tray with baking paper.

Throw the banana and apple into the thermomix 2 seconds speed 6.

Add all wet ingredients, blend 5 sec speed 5.

Add all dry ingredients, blend 20 sec reverse speed 5.

Scrape edges of the bowl and blend again if necessary for 5 sec.

Pour the mixture into the loaf tin and bake for about 45 mins (or until golden and skewer comes out clean – no gooey bits).

Allow to cool on a cooling rack.

Slice and pop enough into the fridge for the week and freeze the other half.

NB: This would be amazing with half a cup of blueberries and coconut too.

Consider baking two loaves if you have lots of kiddos and/or man child eating it too
