Monday mornings are hectic at our house. Everyone is up early and has left the house by 7:15am. I have been trying to figure out how to ensure Mondays flow a bit easier.

Then I remembered overnight oats!! They seriously tick all the boxes for a quick, healthy breakfast, and they’re kid friendly. #winning

Complex carbs – check

Protein – check

Fibre – check

Tastes great – check!

So you want to know my recipe?

Here it is!

Ingredients (per person):

To a glass jar add:

1/2 cup Organic rolled oats

1 tbsp chia seeds or flax meal

1/2 cup milk (I use coco quench because we’re dairy free)

1 tbsp local raw honey or maple syrup (optional)

2 tbsp nut butter ( I use Mayver’s dark roasted crunchy Peanut Butter)

Method:

Add ingredients to jar, stir and leave in fridge overnight.

Slice some fresh fruit and add on top when serving in the morning. (I use berries and apple)

If it’s a little gluggy for your liking, add some extra milk on top.

Oh and cinnamon goes so nicely on top too!

Other options:

1 tbsp shredded coconut

1 tbsp sultanas or cranberries

1 tbsp walnuts (they go so nicely with ripe pear)

Switch nuts for sunflower seeds or pepitas (if you’re nut free)
